Big Green Eggtoberfest!!!

Well slap my grill and call it a Big Green Egg!!! I was invited to be a part of the Eggtoberfest at Stone mountain in Georgia this year for there 21st annual fest, and Lord Honey I had more fun than a grill full of ribs. I am so excited to be a part of the Egg team now. We made samples of food to feed at least 800+ and honey it was all gone in 2 hours....But never fret I am sharing my recipes with you so you can try it for your self.

"Bourbon Bread Puddin' " was the big hit at the Eggtoberfest and I don't want y'all to miss out. You'll be sad as a skunk without a friend if you don't try it.

I got to spend the weekend cooking with my dear friend Chef David Rose from Food Network Star, and boy did we have a great time. There was all kinds of peeps there I got to meet Dr. BBQ and his wonderful wife, can't wait to cook more with them too, and visit his new restaurant in Florida. I was so awesome meet all the fans and made lots of new ones.....Welcome to the Country Bling fan club.

Well enough about that, lets get to some recipes and pics.


Bourbon Bread Puddin


Bourbon Sauce

Bourbon Bread Puddin’

Serves 10-12

Pudding Layer Ingredients:

4-6 Pre-baked biscuits, cubed

4-large bagels, cubed

½-french baguette, cubed

¾-cup water

½-cup apple cider or apple juice

2-cups powdered plain coffee creamer

½-cup butter, melted

3-eggs

1/4-cup maple syrup

1-cup brown sugar, packed

2-tsp cinnamon

2-tsp ground ginger

¾-cup bourbon (optional)

1-TBSP vanilla

Directions for pudding:

· Place the bread in a 9x13 sprayed baking dish.

· But rest of ingredients in mixing bowl and mix up well till combined.

· Pour over bread and smush up with your hands.

· Let stand while making nut topping.

Nut Topping Ingredients:

1-cup pecans, chopped

1-cup walnuts, chopped

1-TBSP bourbon (optional)

1-TBSP maple syrup

½-tsp cinnamon

½-tsp ground ginger

½-cup butter, melted

Pinch of salt

Directions for nut topping:

· Preheat oven to 350.

· Place nuts, syrup, butter and bourbon in a bowl, toss to coat.

· Sprinkle the salt and spices over nuts, toss to coat.

· Place on sprayed baking sheet.

· Bake for 10-12 mins.

· Sprinkle over pudding layer.

· Bake for 35-40 mins or until there’s a slight giggle.

· Make bourbon sauce while baking.

Bourbon Sauce Ingredients:

1-cup butter

1 ½-cups brown sugar

1 ½-cups heavy whipping cream

½-cup apple cider or apple juice

½-cup + 2-TBSP bourbon (optional)

¼-cup maple syrup

2-tsp vanilla

Pinch of salt

Directions:

· Place the butter, maple syrup and brown sugar in a sauce pan and bring to a boil, this takes about 15 mins.

· Pour the heavy cream in and stir.

· Add the bourbon, apple cider and salt stir to combine and cook for 15-20 mins, stirring all the time to keep from sticking.

· Remove from heat and add the vanilla and the 2 TBSP bourbon, stir to combine.

Remove bread pudding when baked and pour desired amount of bourbon sauce over the top.

Tips: As I make mine on my big green egg. The baking times and temps for the pudding is same as baking it in the house oven.

Bourbon Caramel Apple Nacho

Serves 8-10

Ingredients:

6-granny smith apples skin on, cored and cubed

½-cup + 2-TBSP butter

½-tsp salt

½-cup brown sugar

¼-cup bourbon

2-TBSP maple syrup

½-cup apple cider or apple juice

2-tsp cinnamon

1-tsp ground ginger

2-bags of plain pita chips

½-cup pecans, chopped

½-cup walnuts, chopped

1-recipe of bourbon sauce (from bread pudding recipe)

Drizzle Topping:

1-cup honey greek yogurt

2-TBSP orange zest

Juice from 1 orange

1-TBSP bourbon

Directions:

· Preheat a cast iron skillet, and add the butter, let melt.

· Add the apples and salt cook for 5-10 mins always stirring.

· Pour in the apple cider, brown sugar, maple syrup and spices, stir to combine and cook until apples are slightly tender.

· In a mixing bowl place all the drizzle topping ingredients and whisk together.

· Meanwhile coat the nuts with the 2 TBSP melted butter and lay out in a single layer on a baking sheet and toast them for 5-8 mins, be sure not to burn your nuts, remove and let cool.

· When apples are slightly tender add the bourbon and stir.

· Lay the pita chips out on a baking/serving tray, top with the apples, and drizzle the bourbon sauce over and put in oven or on grill and bake for 10 mins.

· Remove and drizzle with yogurt sauce.

Tip: You can make this on grill or in oven. You can also use peaches or plums if you want.
