Chocolate Strawberry Twist

rd honey, who don't love a chocolate covered strawberry. Well let me tell y'all somethin' even better--my "Chocolate Strawberry Twist". All the wonderful richness of decadent chocolate paired with the fruity sweetness of strawberries---with the twist of a creamy chocolate mousse and tender strawberry cake--served as a gorgeous trifle.

Ingredients:

Cake:

1box--strawberry cake mix

4-eggs

1-cup water

1/3-cup oil

2-tsp vanilla

Mousse Layer:

8 oz cream cheese, very soft

1-small box chocolate instant pudding

1 1/2-cups half & half

1-tsp vanilla

Topping:

1 pint--fresh sliced strawberries

2-c fresh whipped cream

chocolate shavings for garnish

Directions:

*Preheat oven to 350.

*In a mixing bowl, place the cake mix, eggs, water, oil and vanilla. Mix well. Pour into a greased 9x13 cake pan. Bake according to instructions--until a toothpick inserted into the middle comes out clean.

*While the cake is baking, make the mousse layer:

*In a mixing bowl, add the cream cheese, half & half, pudding and vanilla, mix until creamed and fluffy. Place in refrigerator until ready to use. *When the cake is removed from the oven and completely cooled, cut into 1 inch squares.

*Assemble in a trifle bowl:

*Layer 1/3 of the cake in the bottom of the trifle dish, add 1/3 of the mousse as the next layer, and continue this layering process until the cake and mousse are completely used.

*Garnish the top with the sliced strawberries, dollops of fresh whipped cream and chocolate shavings. Enjoy!!!
