Meatloaf w/Country Bling Magic!!

Lord Honey, a big slice of meatloaf is a big ol' slice of comfort and nostalgia. Just the smell of it can bring back memories of Granny's kitchen--and Oh, my--the taste of it brings pure comfort to the tummy and the soul. Taters are another All-American comfort food--so I've brought them together with some "Country Bling" magic--enjoy new memories when y'all make my "All-American Magical Meatloaf" for friends and family.


All-American Magical Meat Loaf

Serves 4-6

Ingredients:

4-medium Irish potatoes, peeled and sliced into coins

2-pounds ground beef

1-medium onion, diced

2-eggs, slight beaten

1-cup rolled oats or bread crumbs or crushed crackers

¾-cup any type milk

2-TBSP Worcestershire sauce

2-tsp salt

1-tsp ground black or white pepper

2-TBSP brown sugar

1-tsp garlic powder

1-tsp chili powder

1 ¼-cup ketchup

For the Glaze:

1-cup ketchup

2-TBSP brown sugar

2-tsp prepared yellow mustard

3-tsp Worcestershire sauce

½-tsp ground black or white pepper

Directions:

· Preheat oven to 375°, grease or spray a 9x13x2 baking pan.

· Place the potato slices in a single layer on bottom of prepared pan.

· In a large mixing bowl place the ground beef, add all remaining ingredients on top of the beef; using a light hand, mix together.

· Place the meat mixture into the baking pan, on top of the potatoes and form it into a loaf shape.

· In a small bowl, add the glaze ingredients and mix together, spread half of the mixture over meatloaf.

· Place in preheated oven and bake for 45 mins.

· Remove from oven and spread the rest of the glaze mix over the top; return to oven and bake for another 20-25 mins.

Tip: You can use half beef and half ground lamb or pork; any ground meat.

Hi Jason,

Just had to tell you something I tried this weekend! I wanted homemade pizza but didn’t have a crust or yeast. I mixed equal parts full fat sour cream and SR flour! I stirred it til it came together then kneaded it and formed it in a disc and put olive oil on both sides let it rest about 5 minutes, spread on pizza pan used a fork to prick it so it wouldn’t puff up. Baked at 450 degrees for 5 minutes, put on toppings and baked about 10 mins and it was yummy!

Hey sugar. Yes 1 1/4 cup in the meatloaf. This recipe want get firm in crockpot as it holds lots more moisture and doesn’t allow it to firm. That’s just the nature of a crockpot. But glad it tasted good for ya.

This was amazing. One question is there supposed to be 1 and 1/4 cups of ketchup in the meatloaf or just 1/4 cup? I put 1 and 1/4 cup and it didn't firm up. I also cooked it in the crockpot without the potatoes on the bottom. It was still delicious.
