Growing up on a very large farm in Kentucky, some of our daily chores was milking cows, feeding the animals and working in the fields, so we just didn't have time some days to fix a large elaborate dinner everyday. Southern Pork N Tators is one example of the meals that Granny and Me would do and everyone thought it took us hours to make. The tender pork chunks and the two types of tators really plays well with the sweetness of the pork. Every fork full makes you want more and more. It will make you start tapping your toes and you just cant set still and eat it.
Southern Pork ‘N Tators
(Serves 6-8)
Ingredients:
2 lbs cubed pork loin
4 medium, white tators, washed and cubed
2 medium sweet tators, peeled and cubed
1 small onion, diced
1 red bell pepper, seeded and diced
2 red pears, cored and diced
2 cloves of garlic, minced
½ tsp onion powder
2 tsp black pepper
1 tsp ground sage
2 TBSP honey
½ cup oil
Salt to taste
Directions:
Preheat oven to 350 degrees.
Place tators, all veggies and pork into a bowl.
In a pint sized mason jar, place rest of ingredients and shake what your momma gave ya. Pour over tators, veggies, and pork in bowl.
Toss to cover.
Pour contents of bowl onto a sprayed baking sheet.
Bake 30-35 minutes, stirring every 10 minutes in order to prevent sticking.
Remove and let rest for 15 minutes.
