Save a Punkin'--Carve a Tater!!

Lord Honey, my "Shrunkin' Head Taters" will add a creepy, fun twist to your Halloween buffet. Include the kiddos in meal prep by having them create their own designs in the Tater-Heads.


Shrunkin' Tater Heads w/Gobblin' Dippin' Sauce

Serves 6

Ingredients:

6-medum baking taters, washed & dried

¼-cup veggie oil

Taste to taste

Dipping Sauce:

2-cups packed fresh spinach leaves

2-cloves garlic

2-tsp dried basil

½-tsp dried oregano

½-cup grated parmesan cheese

¼-cup sour cream

1-pack dry Italian dressing mix

¼-tsp black pepper

Directions:

· Preheat oven to 400°.

· Cut eyes, mouth and nose out of the taters, just like carving a punkin.

· Place on a baking sheet and drizzle with oil, sprinkle with salt.

· Bake for 45 mins or until tender and you start to see browning around the carved out places.

· Place all dipping sauce ingredients into a food processor and pulse until combined, if you want it thinner add more sour cream or half & half.

Tip: You can also serve the taters with crispy bacon and shredded cheese.
