Sweet Tater Breakfast Fritters

Lord Honey, I bet y'all never thought about sweet taters for breakfast--well let me just say--yes, yes, and yes. I love sweet taters any way ya fix 'em--so I just had to try 'em for breakfast with my "Sweet Tater Breakfast Fritters w/ Maple-Cinnamon Sauce"

They are great to serve your family or feed a crowd for breakfast or brunch, and can even make a tasty dessert.



Sweet Tater Breakfast Fritters

w/Maple-Cinnamon Sauce

Serves 4-6

Ingredients:

2-cups mashed sweet potatoes

1-egg

1-tsp vanilla

½-cup corn meal

1/4-cup all-purpose flour

1-TBSP brown sugar

½-tsp cinnamon

Butter for frying, about ½-cup

Maple-Cinnamon Sauce:

3-TBSP butter

1-cup maple syrup

½-tsp cinnamon

1-TBSP bourbon (optional)

Pinch of salt

Directions:

· To make the sauce, place a small sauce pan over low heat and add the butter, let melt, add the syrup, cinnamon, salt, and bourbon if using, stir till combined and set aside.

· In a mixing bowl, place the mashed sweet potatoes, eggs and vanilla; mix together.

· Stir in the cornmeal, flour, sugar and cinnamon.

· Place a medium skillet on medium heat add half the butter and let melt.

· Using an ice cream scoop, place 4 individual scoops of the potato mixture into the hot butter, making sure they are well separated.

· Fry for 3-4 mins or until edges start to brown, flip and fry another 3-4 mins, these should be golden brown, remove and place on serving plate, repeat until the potato mixture is gone.

· Drizzle the Maple-Cinnamon Sauce over fritters and serve warm.

Tip: These can be fried the day before and warmed up the next morning, they also work great for dessert with a scoop of your favorite ice cream.
