6 Days of Christmas Cookies

Lord Honey, Here's six cookie recipes to get y'all started on the "12 Cookies of Christmas" and guaranteed to make Santa leave y'all somethin' extra under the tree.

Peppermint Kiss Kringle Cookie

Makes 12-16

Ingredients:

1-box fudge cake mix

½-cup oil

2-eggs

1-tsp vanilla

1-bag peppermint kisses, unwrapped

Directions:

· Preheat oven to 350, line or spray a cookie sheet.

· Place the cake mix, oil, eggs and vanilla in a bowl and mix just until combined.

· Using a cookie scoop or TBSP place 12 dough balls on prepared cookie sheet and bake for 10 mins.

· Remove from oven and immediately place a kiss in the middle of cookies, let set on cookie sheet for 5-6 mins, then remove to cool.

· Repeat until all dough is gone.

· Let cool completely before serving.

Tips: You can do this with any flavor cake mix and any flavor of kisses.

Southern Spiced Coconut Macaroons

Serves 8-10

Ingredients:

1-14 ounce bag shredded sweetened coconut

2/3-cup all-purpose flour

¼-tsp salt

2-tsp vanilla

1-14 ounce can sweetened condense milk

¼-tsp each of cinnamon, nutmeg and ginger

1/8-tsp ground cloves

½-cup walnuts, chopped

Directions:

· Preheat oven to 350, line a cookie sheet with parchment or wax paper.

· In a mixing bowl place all except the walnuts and mix until combined, this takes about 2mins.

· Stir in the walnuts.

· Place tablespoon full of the dough about 2 inches apart on cookie sheet.

· Bake for 12-15 mins or until light brown.

· Let cool on baking sheet.

· Store in an airtight container.

Tip: You can add chocolate chips and any type of nut you wish.

Molasses Crinkles

Makes 4 dozen

Ingredients:

1 ½-cups shortening, melted and cooled

2-cups sugar

½-cup black strap molasses

2-eggs

4-tsp baking soda

1-tsp ground cloves

1-tsp ground ginger

2-tsp cinnamon

1-tsp salt

1-tsp vanilla

4-cups all-purpose flour

2-cups sugar, for rolling balls

Directions:

· In a large mixing bowl place the shortening, sugar, vanilla, molasses, and eggs mix together.

· Sift flour, soda, salt, and spices together.

· Add the dry mix into the wet mix and stir till combined.

· Place in fridge for an hour.

· Preheat oven to 350, line or spray a cookie sheet.

· Roll into 1 inch balls and toss in sugar and place on baking sheet.

· Bake for 10 mins NO LONGER or they will be hard.

· Remove and place on wire rack to cool.

· Repeat until all dough is gone.

TIP: You can roll the balls in brown sugar if wish. Also can use any molasses if can’t find black strap.

Santa’s Thumbprint Cookies

Makes 12 cookies

Ingredients:

1-cup butter, room temp

¾-cup powder sugar

2 ½-tsp vanilla

2-cups all-purpose flour

¼-tsp salt

Your favorite jams and jelly

Christmas colored sugar

Direction:

· Preheat oven to 325, prepare a cookie sheet by lining or spraying.

· In a large bowl place the butter, salt and sugar, whip till fluffy.

· Add the vanilla and stir in.

· Roll dough into 1 inch balls and place on cookie sheet, using your thumb or the back of a teaspoon make a well in the middle.

· Place the Christmas colored sugar in a small bowl and roll the sides of cookies in it.

· Put bake on cookie sheet and fill the wells with your fave jams or jelly.

· Bake for 15-20 mins or until bottoms are golden brown.

TIP: You can fill wells with chocolate chips, caramel pieces or even peanut butter.

Coffee Time Cookies

Makes 24

Ingredients:

1-stick butter, room temp

1-cup light brown sugar

4-TBSP white sugar

1-egg

1-tsp vanilla

1-tsp Coffee Flavor (optional)

1 3/4 –cup all-purpose flour

½-tsp baking powder

½-tsp baking soda

½- tsp salt

½-tsp nutmeg

3-TBSP instant coffee powder

Directions:

* Preheat oven to 350.

* In a mixing bowl place the butter and the sugars and cream till fluffy.

* Beat in the egg, vanilla and coffee flavor.

* In a separate bowl sift together the flour, salt, baking powder, soda, and nutmeg.

* Stir in the dry ingredients until combine.

* Mix in the coffee powder.

* Using a 1 ounce cookie scoop or a tablespoon, drop dough onto a greased or lined baking sheet about 2-3 inches apart.

* Bake for 12 mins.

Tipsy Fruit Cookies

Serves 12-24

Ingredients:

½- cup butter, room temp

1-cup brown sugar

1-egg

1 ¾- cup all purpose flour

½- tsp salt

½-tsp baking soda

½-tsp ground ginger

½-tsp cinnamon

1-tsp vanilla

¼-cup sour cream

3-TBSP bourbon (optional)

½ -cup dried dates, chopped

¾-cup candied fruit peel, chopped

1-cup dried figs, chopped

½-cup dried cranberries, chopped

¾-cup pecans, chopped (optional)

Directions:

* Preheat oven to 350

* Cream butter and sugar together till fluffy.

* Add egg, vanilla, bourbon and sour cream mix till combined.

* Add the flour, soda, salt and spices mix together.

* Stir in the dates, candied peel, figs, cranberries and nuts till combined.

* Using a 1 ounce cookie scoop or a teaspoon place 12 dough balls on a cookie sheet that is lined or sprayed.

* Bake for 10-12 mins.

* Remove and let cool.

Tip: You can dust with powder sugar or even drizzle with melted white chocolate.
