Lord Honey, I love zucchini, no matter what time of year. Of course it's best when fresh outta the garden--but you can also pick up great produce from your local grocery all year long. This great gratin recipe I have will have ya dreamin' about zucchini--that's why I call it "Dreamy Zucchini Gratin" It'll make ya "happier than a bunny in the zucchini patch"--I bet you thought I was gonna say carrot--HaHa!
Dreamy Zucchini Gratin

Serves 6-8
Ingredients:
3-medium zucchini, washed and sliced thin
1-cup half&half
1-cup heavy whipping cream
1-cup grated parmesan cheese, divided
3-cloves garlic, smashed
4-TBSP butter
1-tsp onion powder
1-TBSP Dijon mustard
Salt and pepper to taste
Directions:
· Preheat oven to 350, spray a 9x13 baking dish.
· Layer the sliced zucchini in pan.
· In sauce pan place cream, half and half, garlic, half the parm cheese, butter, onion powder, mustard, salt and pepper, bring to heat and cook until butter is melted.
· Pour sauce over zucchini in pan and top with rest of parm and bake until brown and bubbly, this takes about 30 mins.
Tip: You can use yellow summer squash, asparagus, even thinly sliced cabbage in place, or in addition to, the zucchini.
